The U.S. peanut industry produces four primary varieties — Runner, Virginia, Spanish, and Valencia — each with distinct characteristics suited to different applications. Peanut Varieties
The Four Major U.S. Varieties
The United States grows four commercially significant peanut varieties. Each has a distinct flavor profile, kernel size, and oil content that makes it better suited for certain applications. Understanding which variety is right for your product is one of the first decisions in peanut sourcing — and one where our experience adds real value.
Runner Peanuts
The dominant variety in U.S. production, accounting for roughly 80% of the national crop. Runners are grown primarily in Georgia, Alabama, Florida, and Texas. They are prized for their uniform kernel size, consistent flavor, and high yield — qualities that make them the standard choice for commercial peanut butter production. Runners are also widely used in candy, snack foods, and peanut oil.

Virginia Peanuts
Virginia peanuts are the largest-kerneled variety grown in the United States, cultivated primarily in Virginia, North Carolina, and parts of South Carolina. Their size and distinctive flavor make them the preferred choice for in-shell snacks, gourmet roasting, and premium retail products. Virginia peanuts command a premium price and are typically sold to roasters and specialty food companies.

Spanish Peanuts
Spanish peanuts are smaller than Runners, with a higher oil content and a slightly stronger, nuttier flavor. They are grown primarily in Oklahoma and Texas. Their oil content makes them well-suited for peanut oil production, and their flavor profile is valued in candy manufacturing — particularly in products where a pronounced peanut taste is desired.

Valencia Peanuts
Valencia peanuts are grown primarily in New Mexico and are distinguished by their sweet flavor and multi-kernel pods (typically three or more kernels per shell). They are less common in commercial food manufacturing but are highly valued for natural and old-fashioned peanut butter, where their sweetness and oil content produce a distinctive product. Valencia peanuts are also popular in specialty and health food markets.

Peanut Flour
Peanut flour is produced by grinding roasted, blanched peanuts and is available in defatted and full-fat forms, with varying protein levels and fat contents.
